Based on the 2021-2022 data, the undergraduate student population at MVCC is slightly skewed towards women students, with 54.8% of undergraduate students being women and 45.2% being men. The total number of full-time, first-year undergraduate students is 5,347, with 2,932 women and 2,415 men.

The largest ethnic group among the students is White, comprising 72.5% of the undergraduates population , with a total of 3,870 students.

Following behind are Hispanic students, constituting 8.1% of the student body, with 430 students. African American students represent 7.7% of the population, with 413 students, while Asian students account for 5.8%, with 309 students. Mixed race students account for 2.7% of the undergraduate student body, comprising 144 students. Finally, Hawaiian students have the smallest representation at 0.0% , with 2 students.

International students make up 0.6% of the undergraduate population, totaling 32 students.
